The Garlic Dill Salad Dressing
When my husband decided to start eating healthier I offered to come up with a salad dressing for him to go atop a spinach salad. This is what I came up with.
1/2 tbsp minced garlic (I use jarred garlic)
2 tsp apple cider vinegar
1/2 tbsp garlic and red bell pepper spice blend
1/2 tbsp dill
2 tbsp Extra Virgin Olive Oil
to taste Salt and Black Pepper
Whisk ingredients together.
The salad I use is baby spinach, grape or cherry tomatoes, halved or quartered, sliced black olives, thinly sliced bite size pieces of bell pepper (we prefer red, orange or yellow). Sometimes I’ll add some rinsed canned chickpeas. Pour dressing on, and sprinkle extra black pepper over top. We’re having something else for lunch today, but when I make it again I’ll try to take a picture of the finished product.
